Cheesy sweetcorn fritters

Cheesy sweetcorn fritters

Ingredients

  • 60g self-raising flour
  • 2tbsp cheddar cheese, grated
  • 340g tinned sweetcorn, well drained
  • 2whole egg
  • 1glug sunflower oil

Method

  1. Mix the flour, grated cheese and sweetcorn in a large bowl.
  2. Beat the eggs, then add to the sweetcorn mix and stir well.
  3. Heat a glug of sunflower oil in a large frying pan. Carefully add spoonfuls of the sweetcorn mixture, patting them down into fritter shapes.
  4. Fry on both sides until golden brown and the egg is cooked through.

Hints and tips

  1. Serve sweetcorn fritters with slices of tomato or cucumber sticks, or with a sweet chilli dip for a tasty teatime treat.
  2. Some children find sweetcorn hard to digest, so if you are giving it to your baby for the first time, watch closely for any adverse reactions such as tummy pain or wind.
