Chicken and root vegetable mash

chicken root vegetable mash

Ingredients

  • 50g chicken, diced
  • 1whole sweet potato, peeled and diced
  • 1whole carrot, peeled and diced
  • 1whole parsnip, peeled and diced
  • 25g cheddar cheese, grated
  • 1pinch oregano, (dried)

Method

  1. Boil the diced vegetables together until tender, then drain and add the oregano. Stir to mix.
  2. While the veg is cooking, fry the chicken in a little vegetable oil until fully cooked, and chop into 1cm pieces. 
  3. Mix the chicken into the cooked veg, and add the grated cheese and let it melt.  
  4. Mash the mixture thoroughly, leaving small lumps.

Hints and tips

You can use ready cooked leftover chicken for this recipe, and vary it by using other vegetables, so it’s a great way of letting your baby join in with a family roast dinner.
