Country vegetable casserole

Ingredients

  • 1medium leak
  • 2whole carrot
  • 2whole potato
  • 2whole sweet potato
  • 1whole courgette
  • 2slices brown bread
  • 30g cheese (cheddar or similar) , grated
  • 1tbsp chive
  • 1pinch salt
  • 300ml very low salt vegetable stock
  • 2tbsp cornflour
  • 1pinch black pepper, (to taste)

Method

  1. Preheat the oven to gas mark 6.
  2. Chop the leek, carrots, potatoes, sweet potatoes and courgette into small, bite size pieces and place in a casserole dish.
  3. Pour stock on vegetables, put lid on and place in the oven for 30 minutes until the veg is nearly cooked (test firmness with a fork.)
  4. While veg is cooking, put slices of bread into a food processor (or tear into pieces if you don’t have one.)
  5. Take the veg out of the oven and sprinkle in cornflour. Cornflour thickens the casserole so use more or less depending on how watery the sauce seems.
  6. Cover top of casserole in breadcrumbs or small pieces of bread followed by grated cheese and return to the oven for 10-15 minutes, or until the cheese goes brown and bubbly.
  7. Mash up to serve to your little one.

Hints and tips

Mix up the vegetables to your baby’s taste, potatoes are great for texture but other than that, get creative! It’s a great way of introducing new veg into your baby’s diet.
