Pork, orange and apricot stew

Ingredients

  • 1tsp olive oil
  • 150g lean pork, finely diced
  • 0.5whole small onion
  • 1whole carrot
  • 25g no-soak apricot, quartered
  • 1clove garlic, crushed
  • 0.5whole Heinz vegetable stock cube
  • 1tbsp plain flour
  • 1whole orange, zest and juice

Method

  1. Heat the oil in a medium pan, add the pork and cook over a medium heat, stirring until beginning to brown.
  2. Meanwhile, peel and finely chop the onion and carrot. Add to the pork with the apricots and garlic and cook for two minutes.
  3. Make up the stock cube with 250ml of boiling water from the kettle. Add the flour to the pork, stir well for one minute.
  4. Add the stock and orange zest and juice and bring to the boil, stirring. Cover and cook for 15 minutes or until the pork and vegetables are tender.
  5. Cool slightly before serving with couscous.

Hints and tips

  1. Egg free.
  2. Make sure the meat is cooked all the way through but still soft.
