Simple salmon pasta

Simple salmon pasta

Ingredients

  • 1small salmon fillet, checked for bones
  • 50g baby pasta
  • 0.5whole small leak, sliced and diced
  • 50g broccoli
  • 3tbsp parmesan cheese, grated
  • 4tbsp crème fraiche
  • 5tbsp milk
  • 1tbsp olive oil

Method

  1. Place the salmon in a microwaveable bowl with 2 tablespoons milk and cook in the microwave for 2 minutes. Check the salmon for any bones and flake.
  2. Cook the baby pasta. If you have a steamer pan, steam the broccoli above the boiling pasta for 4-5 minutes. Alternatively, cook the broccoli in a pan of boiling water for 4 mins.
  3. Place the leek in a saucepan with a little olive oil and cook over the heat until soft. Add the rest of the milk, bring to the boil, then add the salmon and poach for 3-4 mins.
  4. Stir in the cheese until melted, then add the pasta.
  5. Stir in the crème fraiche and mash to the desired consistency.

Hints and tips

  1. If you don’t have any parmesan to hand, any full flavoured cheese, such as Cheddar, can be used. 
  2. This makes a great lunch for mum too – add an extra touch of cheese and some black pepper – and don’t puree!
