Ingredients

  • 250g Skinless chicken fillet, diced into small chunks
  • 1tbsp Vegetable oil
  • ½ Red pepper
  • ½ Green pepper
  • 3 Green beans
  • ½tbsp Corn flour
  • 2tbsp Reduced salt soy sauce
  • ½tbsp Rice wine vinegar
  • ½tsp Ground ginger
  • ½ Clove of garlic (optional)

Method

  • STEP 1

    Heat the oil in a wok and add the chicken until thoroughly browned.

  • STEP 2

    Add the peppers, beans and garlic and stir fry for a further 2 minutes.

  • STEP 3

    In a bowl mix together the soy sauce, corn flour, vinegar and ginger.

  • STEP 4

    Add to the wok and bring to the boil.

  • STEP 5

    Simmer for a couple of minutes and serve.

  • STEP 6

    * This is a great dish that the whole family can share – just up the quantities and serve with rice or noodles.
