Sweet Potato Pancakes
Suitable from 10 and a half months, makes at least 18 mini pancakes.

Ingredients
350g sweet potato, diced
100g plain flour
0.75tsp baking powder
1whole egg, beaten
0.25tsp nutmeg
175ml milk
25g butter
Method
Peel and dice the sweet potato.
Place in a pan of boiling water and cook for around 10-15 minutes or until tender.
Sift together the flour, baking powder and nutmeg into a bowl.
Drain the sweet potatoes and add to the flour mixture.
Add the egg and milk and using a hand blender, beat into a batter.
Heat the butter in a pan over a medium heat and ladle in the batter mixture.
Cook until the surface begins to bubble.
Flip and cook the other side.
Hints and tips
Blot with kitchen paper to remove excess grease.
For added sweetness you can serve with strawberries or stewed apple.
You can cut them into fun shapes with biscuit cutters to make them more appetising for little ones.
