Ingredients

1tbsp oil
75g red onion, diced
50g red pepper, diced
75g apple, diced
100g carrot, diced
150g minced chicken or turkey
2 cloves garlic, crushed
10g prunes, chopped
Half tsp ground cinnamon
400g tin chopped tomatoes
150ml water
1tsp tomato purée

Method

1. Heat the oil in a saucepan. Add the red onion, red pepper, apple and carrot and fry together for two minutes.

2. Add the minced chicken, garlic, prunes, and cinnamon and stir together.

3. Add the chopped tomatoes, water, and tomato puree. Bring to the boil.

4. Cover and simmer the mixture for 15 minutes. Blend until smooth.
