Ingredients

  • 60g Onion, finely chopped
  • 40g Chicken breast, diced
  • 1tbsp Olive oil
  • ½tsp Mild curry powder
  • 200ml Coconut milk
  • 20g Raisins
  • 100g Basmati rice, cooked

Method

  • STEP 1

    Cook the rice according to the instructions on the packet.

  • STEP 2

    Heat the oil in a frying pan and add the onion. Sauté for 2 minutes, until soft.

  • STEP 3

    Add the chicken and curry powder.

  • STEP 4

    Slowly stir in the coconut milk and bring to the boil.

  • STEP 5

    Add the raisins and simmer for 10 minutes.

  • STEP 6

    Stir in the cooked rice and blend or mash to the required consistency.
