Ingredients

  • 70g Red pepper, sliced
  • 70g Green pepper, sliced
  • 70g Mango, peeled and sliced
  • 70g Chicken breast, thinly sliced
  • 70g Pineapple, sliced
  • 1tbsp Olive oil
  • A pinch of Chinese 5 spice powder
  • 70g Fine egg noodles

Method

  • STEP 1

    Add the oil to a wok or large frying pan. Once hot, add the chicken and brown for 10 minutes.

  • STEP 2

    Meanwhile, bring a pan of water to the boil and add the noodles.

  • STEP 3

    Add the fruit, vegetables and spice to the chicken, and stir fry for around five minutes, making sure the chicken is cooked thoroughly.

  • STEP 4

    Drain the noodles, chop into small pieces and serve with the chicken and vegetables.

Use scissors to snip the noodles into 1-2cm long strands.
