Vegetarian nuggets

Ingredients
- 50g Broccoli
- 1 Egg
- 120g Breadcrumbs
- 1 Clove of garlic, crushed
- ½ Lemon
- 1 ½tbsp Olive oil
- 50g Cauliflower
- 1 Carrot
- ½ Pepper
- 2tbsp Frozen peas
- 2tbsp Frozen sweetcorn
Method
- STEP 1
Pre-heat the oven to 180C/350F/Gas mark 4.
- STEP 2
Chop the vegetables finely.
- STEP 3
Steam or boil the vegetables until just tender and leave to cool.
- STEP 4
Mash the vegetables until soft.
- STEP 5
Beat the egg and juice the lemon. In a large bowl, combine the vegetable mash, beaten egg, breadcrumbs, garlic, lemon juice and olive oil, and mix well.
- STEP 6
Roll the mixture into small balls, place on a greased baking tray and press into a ‘nugget’ shape.
- STEP 7
Bake for 40 minutes, turning once.
