This recipe makes 2 sandwiches that will liven up your child's lunch
Margarine or softened butter
4 slices of granary bread
Handful of watercress, trimmed
100g prawns
1 tomato, de-seeded and diced
2 tbsp mayonnaise
1 tbsp tomato ketchup
Paprika (optional)
1. Spread two slices of bread with margarine or butter. Arrange the watercress on the bread.
2. Mix the prawns together with the mayonnaise and ketchup, mix in the chopped tomato and spoon onto the watercress. Sprinkle with paprika (if using).
3. Sandwich together with the remaining bread, cut into quarters and trim the crusts.
