Tickle your tastebuds with meal ideas from Roald Dahl's Completely Revolting Recipe book, including this spaghetti inspired by the novel, The Twits
You will need:
2 large saucepans
food processor
2 tbsp (30ml) sunflower oil
1 onion, chopped
2 sticks of celery, chopped
(optional)
1 clove of garlic, crushed
400g tin of plum tomatoes
1 tbsp (15ml) tomato purée
1 tbsp (15ml) parsley, chopped
1 bay leaf
1 tsp (5ml) sugar
2 carrots, grated
salt and pepper
2 tsp (10ml) olive oil
50g fusilli col buco spaghetti
(curly spaghetti)
225g tricolour spaghetti
(spinach, wholewheat and
ordinary)
170g Cheddar cheese (grated)
Serves 4–5
Method:
- Heat the oil in a saucepan and sweat the onion, celery (optional) and garlic until soft.
- Add the remaining ingredients for the sauce except the carrot, bring to the boil and allow to simmer for 30 minutes.
- Remove the bay leaf and liquidize the sauce until smooth.
- Return the sauce to the saucepan, taste for seasoning and keep warm.
- Meanwhile bring a large saucepan of water to the boil, add the olive oil and salt, long spaghetti and then fusilli broken into thirds and cook until tender. Drain.
- Reheat the sauce and fold in the carrot until it is warm.
- Divide out the spaghetti on each serving plate, spoon over the sauce and garnish with the grated cheese.
