Ingredients

  • 300g Boiled rice, rinsed and cooled
  • 185g Canned tuna, drained and flaked
  • 2 Hot dogs, cooked, cooled and sliced
  • 100g Sliced ham, cut into small pieces
  • 100g Cheddar cheese, diced or grated
  • A big handful of pitted olives, sliced
  • 2 Tomatoes, diced
  • 30g Pickled beetroot, well rinsed and chopped
  • 2 Hard-boiled eggs, peeled and chopped
  • 1tbsp Parsley, chopped
  • 3tbsp Olive oil
  • Juice of 1 lemon

Method

  • STEP 1

    In a bowl, add all the ingredients except the oil and the lemon. Stir well and season.

  • STEP 2

    Chill the salad in the fridge and add the oil and lemon before serving cold.
