Suitable from 12 months. Makes four portions
300g boiled rice, rinsed and cooled
185g can tuna in brine, drained and flaked
2 hot dogs, cooked, cooled and sliced
100g sliced ham, cut into small pieces
100g cheddar, diced or grated
big handful of pitted olives, sliced
2 ripe tomatoes, diced
30g sliced pickled beetroot, well rinsed
2 hard-boiled eggs, peeled and chopped
1 tablespoon chopped parsley
3 tablespoons olive oil
juice of 1 lemon
1. In a bowl, add all the ingredients except the oil and the lemon.
2. Stir well and season.
3. Chill the salad in the fridge and add the oil and lemon before serving cold.
Vary the recipe by adding other ingredients such as chopped peppers, crispy lettuce, canned beans, canned sweetcorn, gherkins or even a jar of antipasti.
