just wondered if anyone had one to recommend- there are so many out there!!! Not made one before but thought I'd treat the H!

Mmm I love carrot cake.
175g light muscavado sugar
175ml sunflower oil
3 large eggs
140g grated carrot
Grated zest of one orange
175g self raising flour
1 teaspoon of bicarb of soda
1 teaspoon ground cinnammon
1/2 teaspoon grated nutmeg
Preheat oven to 180 degrees. Grease and line 22cm square tin (I use the same tin for this cake as I do for flapjacks).
Tip sugar into large mixing bowl, pour in oil and eggs. Lightly mix with wooden spoon. Stir in carrots, raisins and orange zest. Sift in flour, bicarb of soda and add spices. Mix well. Pour into tin and bake for 40-45 mins.
Cool in tin for 5 mins and turn out onto rack (you can freeze it at this point if you wanted). I then add a frosting made from 6oz icing sugar and a couple of teaspoons of orange juice and drizzle it over the top.

that sounds amazing... do you think I could replace th sugar with either soft brown sugar or dark muscavado as I have those in and saves going into the rain! hehe

dam it my H doesn't like bannana... but I think I might make that another time- will make sure that I get it!! hehe

I would have thought the sugar wont really make a difference, maybe colour wise if you use the dark?
