I'm making a recipe that calls for aubergine, never had one before (blw has forced us to review our diet!) and the recipe just says 'prepare the aubergine' but I'm not sure how I prepare it? Do I peel it or just dice it up with the skin on?

When we have it, we keep the skin on. We only have it sliced, chargrilled, or in mousakka (sp???)

If you wanted you could rub garlic into the fleshy side and a bit if oil then chop up
