What do you do with them??

I thinly slice, griddle, and put in a salad.
I also put them in frittata. (the kids love this)
Roast them, grill them, stick them in stews/pasta sauces/lasagne, anything really. I really like them so we always have some in the fridge.

Oh, I also like it roasted with peppers and onions (all chopped up quite small), then put into cous cous, with a bit of lemon juice. I want this now!!!

Don’t ever put them in a stew, it waters it down and gives it a weird flavour!

I usually fry them off with mushrooms and onion (or whatever I can find) and then add chopped tomatoes and serve with pasta.
My neighbour grows them so we use them as a quick, handy meal for when you want something in a hurry.

Chop them up with peppers, onion, baby tomatoes and add aubergine if you want. Put them in an oven dish drizzle in oil bang in oven for 40 minutes for roasted med veg.
