just thought as we are all stepping up motivation we could share our favourite healthy low calorie meals. i love this one:
hubby does too and it lasts for a couple of meals too

Try tuna lasagne. Basically chop up some peppers, mushrooms, red onion and a courgette if you like it. Fry in a little bit of olive oil. Chuck in a carton of passata and 2-3 cans of tuna and some Italian herbs. Layer with lasagne sheets. For topping mix a small tub of low fat frontage frais and a small tub of quark with 2 egg yolks and sprinkle with a little cheese.
Cook for 35 minutes at 180oC

One of my favourite lunches - take a pitta bread and spread over tomato puree, sprinkle a small amt of grated cheese then add chopped onion, mushrooms, peppers- what ever you fancy (I don't usually add meat because its more points!) grill it and serve with a big salad. Just like pizza but much lower in fat!

Thai curry here - thai paste with soya milk, really low calories with prawns or chicken and super quick to make!
