I really fancied some hot chilli at the weekend so we bought mince, kidney beans, passata (H doesn't eat tomatoes) and the chilli mix.
H cooked last night as per instructions, he added onions, peppers, and a couple of chillies, plus chilli flakes. It tasted like a pile of nothing. So bland we threw it away. What are we doing wrong? Could it be the lack of actual tomatoes although wouldn't that be like a bologneise?
Please share your tips on cooking a fook off hot chilli.

In my slow cooker i put;
extra lean beef mince
Tin of chopped tomatos
A couple of peppers diced
A jar of passata
celery if i've got it and trying to bulk out the chilli a bit
One of the packets of chilli powder spices
Then i've got a tube of chilli puree so i put a good squirt of that in, and i've got a tube of garlic puree so i add some of that in too
Leave it to cook in the slow cooker all day. Then when i get home it takes bloody lovely.

Mmm I love chilli. I make mine like this:
Extra lean minced beef (big pack)
Lots of green and red peppers
A couple of tins of chopped tomatoes
2 packets of chilli mix

What temp do you cook in the slow cooker Chids? We did mince once and it burnt!
I really want chilli but it's never right. I'm guessing it is the tomatoes

hubs does it very properly with a brisket of beef, or stewing steak instead of mince, and puts all different interesting beans and things in it, as well as onion, garlic and loads of chunky peppers. It's lush, i love it on a jacket potato or my famous-within-the-family potato dauphinoise. i don't do rice, gives me a belly ache.
When i do it i use my normal bolognaise recipe and just add some chilli powder and a bit of smoked paprika because i can make that with my eyes shut. I freak people out by using white wine and milk in my bolognaise, but it tastes good (we think).
edited to add - we NEVER use a packet mix or a jar of sauce in our house. I'm not going to make a song and dance about it though, at the moment we don't have children and have more time to make things. Check back with me this time next year and we might be living off of microwave lasagne...

Peppers, mushrooms, onions, red wine, mince, 3 or 4 diced chilis, chili paste, kidney beans, tin of chopped toms, tom puree, herbs and garlic.

I'm thinking it's the lack of tomatoes belle, I love chopped tomatoes and I find if I've made a bigger pot of chilli but not put extra tomatoes in it can taste a bit...blah. Here's my recipe:
Cook onion, garlic and red pepper (any colour will do) then add mince
Shake in some coriander, cumin and chilli powder/flakes/fresh chillies whatever floats your boat, maybe some black pepper. I only put a little bit of salt on my own dish rather than in the pot as N eats this meal too.
Splash of red wine
Some beef stock
Then half an hour before you serve put in the kidney beans
Mine is always really tasty, probably my favourite meal actually!

I should add, it's not what I use, my H does all the cooking in our house. I'd just use a jar mix...

You have to try gordon ramseys recipe - the cinnamon and nutmeg make a huge difference!

agreed, Hubs puts cinnamon in ours. I try not to be in the room when he does it though, the smell makes me think of cinnabons and that doesn't match in my head with chilli!

Beef mince, onions, mushrooms, kidney beans, grated carrot, harissa paste, chili jam, lea and perrins sauce and gravy granules, used to use red wine as well but haven't done that for about ten years.
Oh and most importantly NO TOMATOES!!!
