We've got friends round for a dinner party tomorrow night and I was going to make this: http://allrecipes.co.uk/recipe/8976/mario-s-italian-baked-chicken.aspx
Never made it before so worried about the mozarella melting out and just having a chicken breast stuffed with pepperoni.
What's the best way to reduce the amount of cheese that has leaked out?
Also, do you cut the chicken breast at the side or along the top?

Well you lay the breast down flat and slice into it from the side... fairly deep but not so much that you risk it falling apart IYSWIM. Then put the cheese in first followed by the tomatoes. It shouldn't just melt out, it will hold together... promise!
If I'm making something similar, I always wrap with parma ham or something similar to keep it all together and add a bit extra. You could try that if you're worried?

As S said slice from the side, you can flatten it out a bit (like butterfly) too to make a wider surface area, if you are still worried and don't want to wrap it you could tie it up with string - this will hold it together more.
