Chicken and sausage I can do lovely, but I want to make a beef casserole in the slow cooker which is rich with a thick sauce - any recipes?

I cheated and bought a packet mix for the slow cooker, bung everything in and that haha

Yep we use the packet mix too. We had beef & ale on Sunday. Brown beef in pan with a squeeze of mustard, add root veg & onion to pot, then beef, 250ml of ale, 50ml water,mixed with the packet, squeeze of tom puree. Was so frickin lush! H had his with rice, I had mine plain.
I normally throw in some caserole beef, some mushrooms, onions, carrots, swede into the slow cooker, with some mixed herbs, salt, pepper, and some red wine if i've got some open, and a beef OXO, then about an hour before the end mix a bit of cornflour and water, and add that in to thicken it up.

We love this one - freezes well and you can just pull out of freezer and serve with crusty bread:

beef massamam curry is also popular here too. I make this one but cook it loads longer than it says in the oven:
I tend to double up on quantities and make huge vats of stuff for the freezer. All of these freeze really well. I always think the thing with beef is to cook it for about an hour longer than the recipe says and it then goes all melty and yummy even if you are using the cheap cuts.

Robin is that the one with lemon? Nina's husband made that for us once, it was lush! Although my H didn't touch it because all he could taste was lemon.

The jamie Oliver one? Yes, I think so but I never put it in (or the blinking Jerusalem artichoke - who has that lying around at home!?).

I soften the onions, add carrot and turnip
Coat the beef chunks in flour,
Add the beef to the onions and other veg
Add a stock cube and then add stock cube and water
Sometimes I add whole grain mustard or tomatoe purée
I add random herbs too
I'm very much a chuck it all in person

I make the Jamie Oliver one as well. I did try it with the Jerusalem artichokes once but I'm not sure they added much to it.

Coat the meat in oil then flour and brown it. Use the oil to then soften the onions. Put veg and stock in the slow cooker and add the neat and onions. Add wine, tomato purée, even worcs sauce.
