I really need to start doing sit ups, i need to lose fat and also tone, what Are the best sit ups to do or doesn't it really matter?

You need to make sure you are doing them properly to get the most out of them, you need to hold/contract in your core muscles (pelvic floor and lower tummy). I never do a full one, usually a variation of crunches, legs in a table top position or reverse curls. Have a look on fitness sites/you tube
Do you have any Pilates classes near you? They are fab for all over toning

I do the same as pb - a mixture of crunches, some Pilates moves, flat plank and bridge plank.

Thanks I've found a Pilates class only 10 mins from home so I've booked into the class tomorrow evening. Will also do those sit up crunches at home

That's great yoyo, let us know how you get on. I did a pilates class at lunchtime today, I felt like I could have had a nice sleep afterwards!
