I need some inspiration and I want to mix up the evening meals as I've gotten into a bit of a rut.

Fish burgers - 300g white fish, 200g smoked fish, whizzed up with a teaspoon of mild curry powder and an onion. Mould into about 4-6 burgers and fry, put in burger bun and eat! Healthy, easy and the kids love them too. Serve with veges of your choice.
Risotto - seafood, prawn, chicken or veg were my failsafe meals.

We eat casseroles done in the slow cooker a lot. I just have a small portion with a big pile of roasted veg, roasted with fry-lite. My fav is butternut squash, I never eat potatoes now as I prefer this. I will have BNS, parsnips, carrots, red onion and mushrooms, its yummy.

What diet are you following?
My current fave is red thai curry
Chicken breast pan fried until cooked, add 2 tablespoons of red thai curry paste, fry off for 2 mins and coat the chicken, add 200mls soya milk, simmer and reduce until its the thickness you want. Tonight I added carrots and broccoli and it was AMAZING!

I'm just using My Fitness Pal. It's the only one that I get on with. That chicken breast recipe looks great as well!

That sounds amazing 1st Baby - does soya milk work ok? As you would usually use coconut milk in that wouldnt you? Or am i thinking or something else..

Superhealthy salmon burgers on bbcgoodfood.com (sorry on phone and can't link) is lovely, quick too, we just had them with salad. Stir fries are always good too especially if you lay off the noodles. Sweet n sour chicken too?

I tend to make regular stuff like lasagne but change ingredients and use quorn and skimmed milk when making the sauce. I also make a few casseroles

All veg stir fry, so no meat and no noodles. Bulk it out with brocolli, cauliflower, BNS & courgette, as well as your usual stir fry veg, then a bag of beansprouts to give a noodle effect without the added carbs!

Yes you normally use coconut milk but it just so happened the recipe I found was using soya milk so less points.
