Pudding rice has a soft consistency, and this is a quick and easy recipe. Serve with dried apricot purée, stewed apple and pear, fruit compote, low-sugar strawberry jam or homemade strawberry purée – just cook some strawberries and strain away some of the liquid. Then purée, sieve and stir in a little icing sugar to taste.

Makes 5 portionsSuitable for freezing You’ll need:• 50g pudding rice• 600ml milk• 1-2 tbsp caster sugar• ½ tsp vanilla essence• fruit purées or jams, to flavourMethod:1. Put the rice, milk and sugar in a heavy-based pan. Bring to the boil, reduce the heat, cover and simmer for 30 to 35 minutes, stirring occasionally.
