Animal pasta with tomato, sweet potato and cheese.
This yummy pasta can help you introduce lumps

 Preparation time: 10 minutes

Cooking time: 35 minutes

Makes 4 portions

Suitable for freezing

You’ll need:

1 onion, chopped

1 clove garlic, crushed

400g (14oz) tin chopped tomatoes

600ml (1pt) vegetable stock

150g (5oz) carrots, peeled and sliced

250g (9oz) sweet potato, peeled and chopped

50g (2oz) Cheddar cheese, grated

2tbsp single cream

250g (9oz) Annabel’s Make Your Own Organic Animal Pasta

Method:

1. Sauté the onion for 4 minutes. Add the garlic and sauté for 1 minute more. Add the tomatoes, stock, carrots and sweet potato. Cover and simmer for about 30 minutes, or until the vegetables are tender, then stir in the grated cheese.

2. Blend to a purée and stir in cream.

3. Cook the pasta according to the packet instructions, and serve with the sauce.
