Keep the Autumn chill at bay with this tasty sausage hash
Serves: 4
You’ll need:
3 tablespoons olive oil
8 pork sausages
3 large red onions, thinly sliced
1 teaspoon caster sugar
450g (1 lb) sweet potatoes, scrubbed and cut into small chunks
8 sage leaves
2 tablespoons balsamic vinegar
Salt and pepper
What to do:
1 Heat the oil in a large frying pan or flameproof casserole and fry the sausages turning frequently, for about 10 minutes, until browned. Drain to a plate.
2 Add the onions and sugar to the pan and cook gently, stirring frequently, until lightly browned. Return the sausages to the pan with the sweet potatoes, sage leaves and a little seasoning.
3 Cover the pan with a lid or foil and cook over a very gentle heat for about 25 minutes until the potatoes are tender.
4 Drizzle with the vinegar and check the seasoning before serving.
