You’ll need:
*450g (1lb) sausage meat, or sausages, skinned
*1tbsp parsley, chopped
*1tbsp sage, chopped
*6 eggs, hard boiled
*2 eggs, beaten
*150g (5oz) breadcrumbs
*oil, for frying
Method:
1. Heat a deep pan filled with oil to 180°C (350°F), or until a bread cube browns in 1 minute. Meanwhile, mix the sausage meat, or skinned sausages, with the herbs. Divide into 6 portions and wrap each of the hard-boiled eggs in the meat.
2. Dip each one in the beaten egg, then coat in the breadcrumbs. Deep-fry in two batches for 6-8 minutes until they turn golden brown. Drain on kitchen paper and allow to cool before serving.
