Ingredients

  • 1 Red onion, finely chopped
  • 1tbsp Oil
  • 6 Sausages (look for those labelled Freedom Foods)
  • Salt and pepper
  • tsp Wholegrain mustard
  • 320g Ready-rolled puff pastry
  • Plain flour, for dusting
  • 1 Free-range egg, beaten
  • Thyme leaves

Method

  • STEP 1

    Finely dice or grate the onion and soften in a pan with the oil. Allow to cool.

  • STEP 2

    Remove the skin from the sausages and mix in a bowl with the mustard, thyme and seasoning. When cooled add the onion and mix.

  • STEP 3

    Roll out the pastry on a floured surface to around the thickness of a pound coin and cut lengthwise into two strips.

  • STEP 4

    Divide the filling into two and place a long sausage down the middle of each strip of pastry. Use a little of the beaten egg to seal the long edge of the pastry and roll around your filling.

  • STEP 5

    Score the top and cut into 16 bite sizes portions and arrange with space between them on a floured baking tray. Pop into the fridge to set and pre-heat the oven to 200°C (Gas mark 6/390°F).

  • STEP 6

    Brush the sausage rolls with the remaining beaten egg and bake for 20-25 minutes until puffed and golden and the sausage meat is completely cooked through. Leave to cool before serving.

Replace the fried onion with fried leeks or if you are a great mustard fan use English mustard for additional heat.
