Ingredients

  • 1tbsp Olive oil
  • 1 Onion, finely chopped
  • ½ Carrot. peeled and grated
  • 300g Chicken mince
  • 1 Egg, whisked
  • 2tsp Tomato purée
  • 75g Breadcrumbs
  • 1tbsp Fresh oregano, finely chopped (or 0.5 tsp dried oregano)
  • 1tbsp Parsley, finely chopped

Method

  • STEP 1

    Sauté the onion and the carrot in half the oil for about four minutes until soft.

  • STEP 2

    To make the chicken burgers, place the chicken mince, onion, egg, tomato puree, breadcrumbs and herbs in a large bowl and mix together. Divide the mixture into 10 patties and, using your hands, shape into burgers.

  • STEP 3

    Heat the remaining oil in the pan. Add the burgers (a few at a time) and fry for about four minutes on each side, until browned and cooked through.

  • STEP 4

    Serve the burgers in rolls with tomato and lettuce or with potato wedges, dips and salad.

Top with thin slices of cheese and/or pineapple for extra flavour.
