Avocado and mint puree

Ingredients
1whole avocado, large and ripe
6whole mint leaf
Method
Slice the avocado in half lengthways, and twist to separate the two halves. Carefully remove the stone with the tip of a knife.
Scoop the avocado flesh from the skin using a dessert spoon. Place in a bowl and mash with a fork or potato masher.
Finely chop the mint and mix into the mashed avocado. For newly weaned babies, puree until smooth if preferred.
Hints and tips
Suitable for freezing.
Serve with breadsticks or fingers of toasted pitta bread as a dip for older babies and toddlers.
