Easy tomato pasta sauce

Method

1. Gently fry the onion and garlic in a little olive oil until soft and golden.
2. Add the tomatoes. If you're using plum tomatoes, break them up with a wooden spoon. Reduce the heat and simmer for 10 minutes.
3. Stir in the olive oil.
4. Puree until smooth.

Hints and tips

1. Suitable for freezing.
2. Use as a pasta sauce or as a base for other dishes such as lasagne or pizza topping.
