Kerrygold’s Christmas Cookies

These colourful cookies will make a lovely addition to your tree – that is, if you can resist eating them all before you hang them up...

Makes: 10 to 15 cookies
Prep: 30 mins plus chilling and setting
Cook: 10 to 12 mins

You will need:
Cookie cutters
Clingfilm
A straw
Ribbon

Ingredients:
100g Kerrygold salted butter
60g golden syrup
75g light muscovado sugar
225g plain flour
1 tsp cocoa
1 tsp ginger
½ tsp mixed spice
½ tsp baking powder

For the decoration:
150g royal icing sugar
Festive sprinkles

  1. Heat the oven to 180°C / 160°C Fan/ Gas Mark 4 and line a baking tray with baking parchment. Warm the butter, syrup and sugar in a small pan over a low heat and stir for 5 mins or until the butter has melted and the sugar has dissolved.
  2. Mix all the dry ingredients in a large bowl, then pour in the warm mixture and use your hands to form a dough. Wrap in cling film and chill in the fridge for up to 20 mins.
  3. Flour the work surface and roll out the dough to the thickness of a £1 coin, then cut out the biscuits using any Christmas cookie cutters of your choice. Use a straw to make a hole near the top of each biscuit, so it can be hung up.
  4. Arrange onto the prepared tray and bake for 10 to 12 mins, until just golden. Leave to cool on the baking sheet for 5 mins, then transfer to a wire rack to cool completely.
  5. Make up the royal icing sugar with 1 tbsp water to achieve a thick but runny consistency. Spread the icing over the biscuits, cover with sprinkles, then turn the biscuit upside down to free any loose sprinkles. Leave to set for 2 hrs, then thread with ribbon and hang on your tree.
