Potato, Carrot and Courgette Rosti

These quick and easy fried rostis can be served as a whole meal or side dish, suitable from 9 months



  • whole carrot 1
  • whole courgette 1
  • whole potato 1
  • Butter 30g, or 4 tbsp olive oil


  • Step 1

    Grate the carrot, courgette and potato and mix well in a bowl.

  • Step 2

    Place the grated mixture into a clean tea towel and squeeze out all the moisture.

  • Step 3

    Heat the butter or oil in a frying pan then add the mixed grated veg. You can make one single rosti or several – the mixture will hold together if shaped. Make sure that the mixture is flat and fry gently for 3-4 minutes on both sides or until the rosti’s are crispy and a light golden brown colour.

  • Step 4

    Transfer to a plate, mash roughly and serve.

  • Add some grated cheese to a cooked rosti whilst still warm to make a delicious all-round meal. Alternatively, the rosti can be a great side dish for an older toddler alongside some grilled chicken or fish.
  • After you have squeezed out the moisture from the grated veg, put the tea towel aside for a couple of minutes, then go back to it and wring out the last few drops of water.
