Quesadilla fingers

Tasty vegetable filled tortilla's topped with cheese, make for a tasty lunch, suitable from 11 months

  • 0.5 tbsp olive oil
  • 0.5 onion, finely chopped
  • 1 clove garlic, crushed
  • 0.25 yellow pepper, cut into thin strips
  • 0.25 red pepper, cut into tin strips
  • 40g sweetcorn
  • 2 tsp mild chilli powder
  • 2 wholemeal tortilla wraps
  • 60g Cheddar cheese, grated


  • Step 1

    Pre-heat a medium-high grill. 

  • Step 2

    Heat the oil in a large frying pan and stir fry the onion and garlic for four minutes, or until soft.

  • Step 3

    Add the pepper, sweetcorn and chili powder and cook for another three minutes.

  • Step 4

    Place a tortilla on a shallow oven-proof dish lined with greaseproof paper. Sprinkle over cheese then add a layer of vegetable mixture. Fold the tortilla in half.

  • Step 5

    Grill for about two minutes on each side to warm through and melt the cheese.

  • Step 6

    Remove from the grill, slice into finger-food sized pieces and serve.
