Ingredients

For the cupcakes

  • 125g Butter or margarine
  • 125g Caster sugar
  • ½tsp lemon zest
  • 125g Self raising flour
  • ¼tsp Baking powder
  • 2 Eggs

For the icing

  • 100g Unsalted butter
  • 225g Icing sugar, sifted
  • 1tbsp Milk
  • ½tsp Vanilla essence
  • Green, pink and yellow food colouring

For the decorations

  • Various sweets, such as Liquorice Allsorts, writing icing, mini biscuits & sponge fingers

Method

  • STEP 1

    Preheat the oven to 180°C (350°F/ Gas mark 4). Line a muffin tin with 10 paper cases.

  • STEP 2

    Whizz the butter, sugar, lemon zest, flour and baking powder in a food mixer. Add the eggs and continue to beat until smooth. Divide the mix between the paper cases and bake in the oven for 20 minutes, or until golden and springy.

  • STEP 3

    Cool in the muffin tin for a few minutes, then transfer the cupcakes to a wire rack.

  • STEP 4

    For the icing, beat half the icing sugar with the softened butter until smooth. Add the remaining icing sugar, milk and vanilla essence. Divide into bowls and colour with a few drops of food colouring. You can use ready-made icing.

  • STEP 5

    Once the cakes are cold, spread some of the icing on top and decorate them to look like animals using the sweets, writing icing, etc.
