Ingredients

  • 50g Self raising flour
  • 1 Egg
  • 1tbsp Milk
  • 1 Carrot, grated
  • ½ Red onion, chopped
  • 2tbsp Tinned sweetcorn
  • 2tbsp Fresh basil, chopped
  • 1tbsp Sweet chilli sauce
  • 50g Cheddar cheese, grated
  • A little olive oil or sunflower oil for frying

Method

  • STEP 1

    Measure the flour, egg and milk into a bowl. Mix together, then add the remaining ingredients. Season.

  • STEP 2

    Heat the oil in a frying pan. Fry spoonfuls of the mixture for 2 to 3 minutes on each side. Flatten slightly with a spatula as you cook them.

  • STEP 3

    Serve with dipping sauce if desired.
