These tasty, child-friendly fritters are packed full of vegetables. They're super quick to prepare and cook – we're taking less than 20 mins – this recipe makes enough for grown-ups too.


  • 50g self-raising flour
  • 1 egg
  • 1 tbsp milk
  • 1 carrot, grated
  • ½ red onion, chopped
  • 2 tbsp tinned sweetcorn
  • 2 tbsp fresh basil, chopped
  • 1 tbsp sweet chilli sauce
  • 50g Cheddar cheese, grated
  • A little olive oil or sunflower oil, for frying


  • STEP 1

    Measure the flour, egg and milk into a bowl. Mix together, then add the remaining ingredients. Season.

  • STEP 2

    Heat the oil in a frying pan. Fry spoonfuls of the mixture for 2 to 3 minutes on each side. Flatten slightly with a spatula as you cook them.

  • STEP 3

    Serve with dipping sauce if desired.
