  • 85g Butter
  • 4tbsp Golden syrup
  • 110g Soft brown sugar
  • ¼tsp Salt
  • ½tsp Vanilla extract
  • 200g Oats
  • 30g Raisins
  • 30g Sultanas
  • 30g Dried cranberries
    or chopped dried apricots
  • 30g Dessicated coconut

    Method

    • step 1

      Preheat the oven to 150c/gas mark 2. Line a 20cm square tin with baking parchment, with the parchment coming up the sides of the tin.

    • step 2

      Put the butter, syrup, sugar and salt in a saucepan and heat gently, stirring occasionally, until the butter has melted. Remove from the heat, stir in the vanilla and set aside to cool.

    • step 3

      Put the oats, dried fruit and coconut in a bowl, add the melted mixture and stir until everything is well mixed. Press into the prepared tin (a potato masher is good for this) amd bake for 35 to 40 minutes, until golden brown at the edges.

    • step 4

      Remove from the oven and cool for 10 minutes, then mark into bars or squares with a sharp knife. Cool completely in the tin before lifting out and cutting up. Store in an airtight container.
