Italian rice salad

Suitable from 12 months. Makes four portions

Ingredients

300g boiled rice, rinsed and cooled

185g can tuna in brine, drained and flakedĀ 

2 hot dogs, cooked, cooled and sliced

100g sliced ham, cut into small pieces

100g cheddar, diced or grated

big handful of pitted olives, sliced

2 ripe tomatoes, diced

30g sliced pickled beetroot, well rinsed

2 hard-boiled eggs, peeled and chopped

1 tablespoon chopped parsley

3 tablespoons olive oil

juice of 1 lemon

Method

  • Step 1

     In a bowl, add all the ingredients except the oil and the lemon.

  • Step 2

     Stir well and season.

  • Step 3

    Chill the salad in the fridge and add the oil and lemon before serving cold.
