Italian rice salad

Ingredients
- 300g Boiled rice, rinsed and cooled
- 185g Canned tuna, drained and flaked
- 2 Hot dogs, cooked, cooled and sliced
- 100g Sliced ham, cut into small pieces
- 100g Cheddar cheese, diced or grated
- A big handful of pitted olives, sliced
- 2 Tomatoes, diced
- 30g Pickled beetroot, well rinsed and chopped
- 2 Hard-boiled eggs, peeled and chopped
- 1tbsp Parsley, chopped
- 3tbsp Olive oil
- Juice of 1 lemon
Method
- STEP 1
In a bowl, add all the ingredients except the oil and the lemon. Stir well and season.
- STEP 2
Chill the salad in the fridge and add the oil and lemon before serving cold.
