- 1 Onionchopped
- 1tbsp Vegetable oil
- 2 Carrotschopped
- 1 Leekwashed, trimmed and chopped
- 1 Stick of celerychopped
- 1 Juice of 1 lemon
- 2pint Vegetable stock
- 250g Lentils

Heat oil in large pan. Add onion and carrots, medium heat for 5 minutes.

Add leek and celery and cook for further 5 minutes.

Add lemon juice, veg stock and lentils and simmer for 20 minutes.

Blend until smooth, just leaving a few chunks of vegetables. Add seasoning, herbs or garlic to taste.

This recipe is great as any of the vegetables can be swapped or deducted depending on what you have in. Serve with cheese on toast or crusty bread.
