  • 1tbsp Olive oil
  • 150g Lean pork
    finely diced
  • ½ Onion
  • 1 Carrot
  • 25g No-soak apricots
    quartered
  • 1 Clove of garlic
    crushed
  • 1 Very low salt vegetable stock cube
  • 1tbsp Plain flour
  • 1 Orange
    zest and juice

Method

  • step 1

    Heat the oil in a medium pan, add the pork and cook over a medium heat, stirring until beginning to brown.

  • step 2

    Meanwhile, peel and finely chop the onion and carrot. Add to the pork with the apricots and garlic and cook for 2 minutes.

  • step 3

    Make up the stock cube with 250ml of boiling water from the kettle. Add the flour to the pork, stir well for 1 minute.

  • step 4

    Add the stock and orange zest and juice and bring to the boil, stirring. Cover and cook for 15 minutes or until the pork and vegetables are tender.

  • step 5

    Cool slightly before serving with couscous.

Tips

Make sure the meat is cooked all the way through but still soft.
