Sweet pea and salmon supper

A fishy feast packed with protein

1 small salmon fillet (preferably organic)

50g frozen peas

2 teaspoons of olive oil/a knob of butter

10g grated mild cheese such as Gruyere or Mild Cheddar (optional)

Makes 6 portions

What to do:

1 Wrap the salmon fillet in silver foil and place in the oven for approximately 20 minutes at 18⁰C.

2 Place peas in a pan of boiling water for approximately 8 minutes. Once cooked, drain and using a fork blend with the olive oil or butter to form a soft mash.

3 Take the salmon out of the oven, remove all bones and flake with a fork.

4 Mix together the peas and salmon, adding grated mild cheese if desired.
