Tomato and pepper pasta

Ingredients

  • 2tbsp Olive oil
  • Two tins of chopped tomatoes (800g)
  • 1 Onion, chopped
  • 1 Red pepper, chopped
  • 1 Yellow pepper, chopped
  • 1 Green pepper, chopped
  • 2 Courgettes, doced
  • 1tbsp Tomato purée
  • 1tbsp Milk
  • 100g Pasta per person

Method

  • STEP 1

    Fry the onion and garlic in oil until soft, then add the peppers and cook for 5 minutes.

  • STEP 2

    Add the rest of the sauce ingredients and simmer for 20 minutes.

  • STEP 3

    Cook the pasta in boiling water until tender, then drain.

  • STEP 4

    Mix the cooked pasta with the sauce and serve with grated cheese.
