- 2tsp Olive oil
- 1 Onionfinely chopped
- 1 Clove of garliccrushed
- 200g Lean minced beef
- 25g Fresh breadcrumbs
- 1tbsp Parsleyfinely chopped
- 15g Parmesan cheesegrated
- 1tsp Tomato purée
- Small eating apple
- Unsalted vegetable stock cubecrumbled
- 1 EggBeaten
- Vegetable oilfor frying
Method
step 1
Heat the olive oil in a pan and saute the onion and garlic gently for 2 minutes. Allow to cool.
step 2
Mix together the rest of the ingredients, with the sauteed onion and garlic and the beaten egg to bind.
step 3
Form into 25 mini meatballs and fry in the vegetable oil until browned and cooked inside. Drain on kitchen paper.
