  • 2tsp Olive oil
  • 1 Onion
    finely chopped
  • 1 Clove of garlic
    crushed
  • 200g Lean minced beef
  • 25g Fresh breadcrumbs
  • 1tbsp Parsley
    finely chopped
  • 15g Parmesan cheese
    grated
  • 1tsp Tomato purée
  • Small eating apple
  • Unsalted vegetable stock cube
    crumbled
  • 1 Egg
    Beaten
  • Vegetable oil
    for frying

Method

  • step 1

    Heat the olive oil in a pan and saute the onion and garlic gently for 2 minutes. Allow to cool.

  • step 2

    Mix together the rest of the ingredients, with the sauteed onion and garlic and the beaten egg to bind.

  • step 3

    Form into 25 mini meatballs and fry in the vegetable oil until browned and cooked inside. Drain on kitchen paper.
