There’s nothing like soldiers and a runny egg as a tasty comfort meal: add some creamy avocado and you’re set.
British Lion Eggs and world champion diver Tom Daley have come up with a tasty recipe for eggrecipes.co.uk that’s nutritious, and pretty simple to make for busy parents (Tom knows all about that, now he has baby Robbie).
It also works as a lovely, nutritious lunchtime treat for 1 (just alter amounts accordingly).
Ingredients
- Avocado a quarter
- White bread 1 slice
- British Lion egg 1
Method

Step 1
Boil the egg for 6 minutes. Cool under cold running water and peel off the shell. Cut in half and set aside.

Step 2
Toast the bread and cut off the crusts.

Step 3
Mash the avocado until it is very smooth and spread onto the toast. Slice into fingers and serve with the egg halves so your baby can feed themselves.

In October 2018, The Food Standards Agency (FSA) confirmed that eggs safe to be eaten runny, and even raw, by vulnerable groups including infants, children and pregnant women – as long as they are British Lion-stamped.
