Goujons of fish with tartar sauce
For preschoolers and up
Preparation time: 10 minutes
Cooking time: 8 minutes
Makes 3 portions
Suitable for freezing
You’ll need:
• 6 cream crackers
• 25g fresh grated Parmesan
• 1 egg, lightly beaten
• 2 tbsp flour
• 150g plaice fillets (or cod or sole), skinned and cut into goujons, or strips
• 4 tbsp vegetable oil
• chips, to serve
For the tartar sauce:
• 150ml mayonnaise
• 1 tbsp parsley, chopped
• 1 tbsp capers, chopped
• 2 tsp gherkins, chopped
• 1 tbsp chives, chopped
• lemon juice, to taste
Method:
1. Put the crackers in a plastic bag and crush them with a rolling pin. Mix the crushed biscuits with Parmesan and a little freshly ground salt and black pepper.
2. Put the beaten egg in a shallow bowl, the flour in another and the crackers in a third. Dip the fish in the flour, then the beaten egg and then roll in the crumbs.
3. Heat the oil in a pan and sauté the fish over a medium heat for a minute on each side.
4. For the tartar sauce, mix the ingredients together and serve with the fish and chips.
