Ingredients

  • ½ Onion
  • ½ Red pepper
  • 400g Tinned tomatoes
  • 100g Aubergine
  • 1 Potato
  • ½tsp Curry powder
  • ½tsp Garlic powder
  • 1tbsp Olive oil

Method

  • STEP 1

    Heat the oil in a large pan and add the onion. Cook for 2 minutes then add the curry powder and garlic powder. Cook for a further 2 minutes.

  • STEP 2

    Add all the other ingredients and stir in the tomatoes.

  • STEP 3

    Cover and simmer for 30-40 minutes, stirring occasionally and adding water if necessary.

  • STEP 4

    Mash to the right consistency.

  • You can add or substitute any vegetable to make sure your child is getting plenty of veg.
  • For family dinners you can remove your child’s portion and then add some chilli to spice it up and serve with rice or naan bread.
