Aubergine, peppers, onion, potato and tomatoes make up this veggie-packed curry, suitable from 7 months

Ingredients
- whole onion 1/2
- whole red peper 1/2
- tinned tomato 400g
- Aubergine 100g
- whole medium potato 1, diced
- curry powder 1/2 tsp
- garlic powder 1/2 tsp
- Olive oil 1 tbsp
Method

Step 1
Heat the oil in a large pan and add the onion. Cook for 2 minutes then add the curry powder and garlic powder. Cook for a further 2 minutes.

Step 2
Add all the other ingredients and stir in the tomatoes.

Cover and simmer for 30-40 minutes, stirring occasionally and adding water if necessary.

Step 4
Mash to the right consistency.
- You can add or substitute any vegetable to make sure your child is getting plenty of veg.
- For family dinners you can remove your child’s portion and then add some chilli to spice it up and serve with rice or naan bread.
