Baby’s first chilli

This traditional homemade Mexican chilli is suitable for the whole family to enjoy with rice or jacket potato

  • 4 tbsp olive oil
  • 500g beef mince
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 1 pepper, chopped
  • 1 pinch chilli powder
  • 0.5tsp ground cumin
  • 0.5tsp paprika (optional)
  • 2tsp tomato puree
  • 1 400g can tomatoes
  • 1 400g can kidney beans, drained
  • 150ml very low salt vegetable stock
  • 200g rice

Method

  • Step 1

    Heat the oil in a non-stick pan and fry the mince, onion, garlic and red pepper for 6-8 minutes.

  • Step 2

    Add the chilli powder, cumin and paprika (if using). Cook for one minute.

  • Step 3

    Add all the remaining ingredients, cover and simmer for 20 minutes, stirring occasionally.

  • Step 4

    Blend or mash to correct consistency for your baby and serve with rice.
