Annabel Karmel's Festive Puff Pastry Pizzas recipe

- Makes 6 pizzas
- 1 tbsp olive oil
- 1 onionfinely chopped
- 2 cloves of garliccrushed
- 250g passata
- 2 tbsp tomato purée
- 2 375g packs of ready-rolled puff pastry
- 150g grated mozzarella
- ½ red peppersliced into strips
- ½ yellow peppersliced into strips
- pepperoni slices
- black olivessliced
- cucumbercut into strips and slices
- chives
Method
step 1
Preheat the oven to 200°C/Fan 180°C/400°F/Gas mark 6. Line 2 baking trays with greaseproof paper

Heat the olive oil in a saucepan. Add the onion and fry until soft. Add the garlic and fry for 30 seconds

Add the passata and tomato purée and simmer for 15 minutes. Set aside to cool

Unroll the pastry and stamp out 2 large tree shapes, using a large Christmas tree cutter. Place on a lined baking sheet

Stamp out 4 circles, using a cookie cutter, for the baubles and place on the 2nd lined baking sheet

Prick the pastry bases all over with a fork. Spread the set-aside sauce over the pastry and sprinkle with the grated mozzarella

Decorate the Christmas trees with pepper strips, pepperoni slices and sliced olives to look like tinsel and ornaments. Decorate the baubles with cucumber strips, pepper strips, pepperoni slices and sliced olives and use cucumber slices and chives to create the bauble strings

Bake in the oven for 20 to 25 minutes until golden brown
