Annabel Karmel's lettuce ‘boats’ with marinated steak

Ingredients
- 300g Sirloin steak, sliced into strips
- 3tbsp Oyster sauce
- 1tbsp Honey
- 2tbsp Sunflower oil
- 5 Spring onions, sliced
- 1 Red pepper, deseeded and diced
- 5 Mushrooms, sliced
- 2cm fresh ginger, grated
- 4tbsp Sweetcorn
- 2tsp Soy sauce
- Lettuce, little gem or iceberg leaves
Method
- STEP 1
Mix the steak, 1tbsp of oyster sauce and the honey together and leave to marinate for an hour or so.
- STEP 2
Heat a wok until hot. Add 1tbsp of oil, then quickly fry the beef until browned and just cooked. Transfer to a plate.
- STEP 3
Add the remaining oil to the wok. Add the sliced onions, pepper, mushrooms and ginger, and stir fry for 2 minutes. Add the sweetcorn, remaining oyster sauce and soy sauce, and toss over the heat.
- STEP 4
Return the beef to the wok and toss together with the vegetables.
- STEP 5
Arrange the lettuce leaves on a platter and fill with the beef mixture.
