Annabel Karmel’s tasty beefburgers

  • Makes 8

This scrummy dinner is a great source of iron and protein

  • 1 tbsp vegetable oil
  • 1 onion, peeled and finely chopped
  • 400g lean minced beef
  • 1 tbsp chopped fresh parsley
  • 1 chicken stock cube, finely crumbled
  • 1 apple, peeled and grated
  • 1 egg, lightly beaten
  • 50g fresh breadcrumbs
  • 1 tsp Worcestershire sauce
  • Salt and freshly ground black pepper
  • A little plain flour
  • For grilling: a little margarine and yeast extract
  • Peas, tomatoes, cheese and cooked spaghetti for decoration

Method

  • Step 1

    Sauté the onion in oil until soft. In a mixing bowl, combine the onion with all the ingredients, except the flour.

  • Step 2

    With floured hands, form the mixture into 8 burgers. Dot with a little margarine and Marmite and grill for 4 minutes on each side or until cooked through. Alternatively, fry in a little hot oil for 3 minutes each side or until cooked through.

  • Step 3

    Decorate with peas for eyes, cheese for noses and tomato slices for mouths. Arrange the spaghetti around burgers for hair.
